How do you choose the right commercial refrigerator?

A decision framework for storage, preparation and merchandising refrigeration.

Short answer

Choose a commercial refrigerator by application first—storage, preparation or merchandising—then verify product temperature requirements, usable capacity, peak door traffic, footprint, clearances, electrical service, ventilation, sanitation workflow, service access and warranty for the exact model. Exterior size and advertised capacity alone are not enough.

1. Match the refrigerator to the job

A reach-in used for bulk storage does a different job from a prep table opened continuously during service or a merchandiser designed to present products to customers. Begin by naming the operating role and the product class it must support.

  • Reach-in or undercounter storage
  • Prep-line access
  • Customer-facing merchandising
  • Backup or overflow capacity
  • Refrigerated versus frozen product

2. Calculate usable capacity

Nominal capacity is not the same as usable capacity. Shelving, containers, airflow paths and the way staff load the cabinet affect what can actually be stored. Estimate peak inventory and preserve space for organized rotation and air movement rather than planning to pack the box completely.

3. Account for door traffic and room conditions

Frequent openings, long loading periods, warm kitchens and restricted airflow increase the work demanded from the refrigeration system. These conditions should be discussed before selecting a model; they should not be discovered after installation.

4. Verify site fit and serviceability

  • Approved ventilation and installation clearances
  • Door swing, drawer travel and aisle impact
  • Condenser and filter cleaning access
  • Access to controls and service panels
  • Voltage, phase, amperage and plug
  • Drain requirements where applicable

5. Compare ownership risk

Compare warranty terms, local service access, parts availability, cleanability and the operational consequence of failure. For a downtime-critical position, the cheapest acceptable unit may not be the lowest-risk choice.
